Cooking at Maine Camps is a favorite activity among girls and boys. Campers love the tasty treats they make at their Maine Camp cooking class kitchen facilities and in wilderness/campfire cooking activities too. 

While cookies are always a favorite (and there’s quite a wide variety!), Maine Camps’ cooking instruction also goes way beyond to teach campers to make and sample some new tastes too. Dishes include sushi, salsa, swiss chard mac and cheese, salad niçoise, soups, scones, crepes, potato pancakes, pizza and more! Creating dishes like pies and sauces with Maine wild blueberries that campers picked on trips are always a hit.

Some Maine Camps even create a camp cookbook each summer that campers can bring home with them so they can enjoy their favorite camp treats during the year ‘til they get back to their summer camp home away from home.

Speaking of tastes of Maine … while we’re home in these cold winter months, we thought you might enjoy a recipe for lobster stew. This recipe and image come from Maine-based Luke’s Lobster, a fave among the Maine Camp Experience community. Enjoy!

Ingredients:

  • 1 lb of lobster meat (you can buy Luke’s lobster meat in the frozen food sections of some supermarkets like Whole Foods or online; or buy lobster at your local fish store or grocer)
  • 6 Tbsp unsalted butter
  • 1 small onion, diced
  • 3/4 cup fish stock
  • 3 cups heavy cream
  • 1 tbsp chives, diced
  • Salt & pepper, to taste

Directions:

  1. Melt butter over medium high heat until melted.
  2. Add onions and sauté until translucent.
  3. Lower heat to medium low, add stock and heavy cream and let simmer for 5 minutes. Do not let it boil! Bring up to a simmer slowly to ensure the milk does not curdle. 
  4. Add cooked lobster meat just to heat through.
  5. Stir in diced chives.
  6. Salt and pepper to taste!
